Asian Chicken & Lime Soup
When you want to liven up the classic Asian chicken soup, try this version with lime.
Ingredients
- 600 ml chicken stock
- 100 g chicken breast
- 40 g carrot
- 30 g celery
- 30 g chili pepper
- 30 g zucchini
- 40 ml soy sauce
- 10 g ginger
- 1 lime
- 50 g glass noodles
Instructions
- Clean the veggies then cut them into julienne strips. Grate the ginger.
- Cut the chicken breast into thin strips.
- Soak the noodles in hot water for 3-4 minutes, then rinse with cold water.
- Heat the stock together with the soy sauce, ginger and lime juice until they start to boil. Then add the chicken and cook for a few minutes until the chicken breast is cooked.
- Put the veggies and the noodles in a bowl. Pour in the hot soup. For a slightly spicy flavor, add some thin slices of chili pepper.
