Fluffy Vegan Plum Pie
Can you believe that this fluffy, delicious-looking plum pie contains neither eggs nor dairy? That’s why I love using mineral water; it works magic with the most ordinary of batters.
There isn’t a simpler batter than this one, and it goes great with any seasonal fruit you choose, making some of the most amazing pies. The texture is much like that of a sponge cake, and the taste is delicious, flavored with lemon juice and zest. It all blends wonderfully with the sweet and juicy plums.

Fluffy Vegan Plum Pie
A delicious dairy-free and vegan pie filled with sweet and sour plums – a perfect fall treat for the entire family.
Ingredients
- 300 ml sparkling water
- 150 ml oil
- 250 g sugar
- 450 g flour
- 10 g baking powder
- a pinch of salt
- 1 lemon juiced and zested
- 1 tablespoon vanilla essence/one sachet of vanilla sugar.
- 800 g plums fresh and pitted.
Optional:
- nuts or almond flakes for decorating
Instructions
- In a large bowl mix the oil, sparkling water, sugar, lemon juice and zest, vanilla, flour, salt and baking powder.
- Mix until you get a soft, smooth and creamy composition, with no lumps.
- Line a baking pan with parchment paper and preheat the oven to 180 ºC/ 356° F.
- Pour the batter into the baking pan and place the clean plums on top and press gently (I removed the pits and pressed the halves together to keep the plums whole in the batter).
- You can also sprinkle almond flakes or nuts on top.
- Bake for 45-50 minutes at 180 ºC/ 356° F, no fan, until the batter cracks slightly and the edges turn golden brown.
- Slice it after it has cooled for at least 10-15 minutes.
