Quick & Creamy Gnocchi w/ Tomato Sauce & Burrata
This is pure Italian comfort food with holiday flavor: gnocchi with creamy tomato sauce, basil and garlic, a handful of parmesan cheese, and a creamy and refreshing burrata to balance all the tastes and textures.
Burrata is an Italian cheese invented in the early 20th century and has a mild, creamy flavor reminiscent of fresh cream and butter. It’s a perfect choice for gnocchi, pasta and pizza.
Quick & Creamy Gnocchi w/ Tomato Sauce & Burrata
Ingredients
- 1 pack ready-made gnocchi
- 1 onion
- 5 cloves garlic
- 2 tbsp olive oil
- 2 sprigs basil
- 400 ml tomato juice/tomato purée
- 1 lump burrata
- 50 g parmesan cheese
- 1 tsp oregano
- salt to taste
- pepper to taste
Instructions
- Cook the gnocchi according to package instructions. They should be ready in about 5 minutes. Retain some of the cooking water.
- In a frying pan, heat the olive oil well and sauté the diced onion and crushed garlic until golden.
- Add the gnocchi and let them brown together with the onion and garlic for 5-6 minutes.
- Add the tomato juice, finely chopped basil, oregano, salt and pepper to taste.
- Pour over a ladleful of the water in which the gnocchi were boiled and simmer for another 5 minutes or until the sauce reaches a creamy consistency.
- Serve with Parmesan cheese, cold burrata, and sprinkled with fresh basil.
