Apple Gorgonzola Salad with Blackberry Vinaigrette

- 1 handful of spring mix (baby lettuce, spinach, etc.)
- ½ apple
- 30 g gorgonzola
- 4 walnut kernels
For the blackberry vinaigrette: blend the blackberries and mix with the olive oil and balsamic vinegar. Season with salt and pepper.
Place the lettuce on a plate and top with apple slices, diced gorgonzola, walnut kernels, and the blackberry vinaigrette.
